The familiar orange root of Indian winter markets, one of the richest everyday sources of beta-carotene, which the body converts into vitamin A as it needs it.

The carrot is the swollen taproot of Daucus carota, a member of the parsley family first grown in Central Asia and now eaten across India, from gajar halwa to winter salads. Its orange colour comes from beta-carotene and related carotenoids.

Beta-carotene is a provitamin A: the body converts it into vitamin A as needed, and vitamin A supports normal vision, skin and immune function. This link is well established. Carrot extract in a tablet is a concentrated food source of the same orange pigments.
